Masamoto Sohonten is an incredibly highly respected brand, with over 150 years of experience. Minosuke Matsuzawa - the first-generation blacksmith under Masamoto, went to Osaka at 17 years old to apprentice. Five generations later, it's clear that Matsuzawa-san's vision has been carried on, and it's safe to say that Masamoto Sohonten has achieved legendary status in Japanese knives.
The KS-Series is what they are probably best known for. Excellent grind that makes the knives extremely thin behind the edge, giving them exceptional cutting ability, and the Fit & Finish is superb.
The knives are made of two layers of Shirogami (White Steel) 2 in the core and soft iron, so they take a very fast edge that can become very sharp.
This knife is an Usuba, which is a traditional Japanese vegetable knife that is only sharpened on the right side.
The knife comes with a saya.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
