The knife is forged by master Shogou Yamatsuka in three layers, with the core consisting of the renowned Ginsan steel (Ginsanko), surrounded by stainless steel layers for optimal durability and minimal maintenance. The ultra-thin laser profile and precise grinding by Tadataka Maruyama ensure exceptional sharpness and control, ideal for the finest cutting and peeling tasks. Maintenance and use

Wash and dry the knife thoroughly by hand after use. Avoid dishwashers and store the knife dry. Sharpen regularly to maintain optimal sharpness and only use the knife for its intended purpose to protect the fine edge.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
