Hatsukokoro is a brand from Amagasaki, near Osaka City. They collaborate with various blacksmiths and sharpeners across Japan, developing new series in an attempt to create some of the best knives in the world, as well as very good knives in a lower price range to cater to all different needs.
The name of this knife comes from the stainless damascus cladding, which is composed of a combination of brass and copper, creating a beautiful play of colors.
This knife is made with V-Toku2 core steel and is often compared to Shirogami (White Paper Steel) due to its relatively simple composition. The main difference is that V-Toku2 contains a small addition of tungsten. This improves hardness and sharpness, combining the wear resistance of Aogami with the sharp cutting sensation of Shirogami.

The knife must never be washed in a dishwasher, must not cut hard items such as bones, cartilage, frozen items, or hard cheeses. Remember that thin, hard metal can break.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
