The Itabaryu Santoku 165mm White 2 is an excellent knife from the renowned Japanese brand Itabaryu, founded by the skilled knife sharpener Itaba Naoya in Tokamachi City. Each knife is carefully forged by a talented smith in Sanjo, which ensures outstanding quality and craftsmanship. This Santoku is designed to handle meat, fish and vegetables with ease, making it an indispensable tool in any kitchen.
The knife has a convex grind, which gives fantastic cutting performance and excellent food release. It is also ergonomically designed with a rounded spine and heel that ensure a comfortable grip. With its unique taper, which puts extra weight in the handle, you get a perfect balance between strength and sharpness.
Itabaryu knives offer exceptional value for money, and we are proud to have them in our range. This model is made with a core of Shirogami #2 (White 2) carbon steel clad in soft iron, which gives a beautiful patina over time and an extremely high sharpness potential.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
