Description & specifications

The KAI Shun Nagare 18cm Santoku is a high-quality kitchen knife that combines traditional craftsmanship with modern materials. The knife has a distinctive 72-layer Damascus construction of VG2 and VG10, which gives outstanding cutting performance, wear resistance and a unique pattern. The ergonomic Western-style pakkawood handle sits well in the hand and reduces fatigue during longer use. The Santoku shape is perfect for precision tasks in the kitchen, such as cutting meat, fish and vegetables, and with a hardness of around 61 HRC the blade stays sharp for a long time. Please note that the knife is not dishwasher safe and should not be used on bones, frozen food or very hard items, to avoid damage.

Maintenance & use
