Description & specifications
From Konosuke in Sakai, we have here something of a rarity: an HD2 Sujihiki with western-style handle in white corian.
The knife is of the usual high quality and finish that you expect from Konosuke, and the western style makes the knife just a little heavier than with a WA handle, but without compromising on the cutting properties - the blade is as thin as you would expect from an HD2.

The sujihiki is used as a slicing knife - and here in the "short" version it can serve as an all-rounder as it can practically function as a long utility knife. HD2 steel is considered to be semi-stainless, which should be interpreted as meaning that it does not patina as easily as blue and white steel - but, like all other (stainless) steel, it can still patina.
This knife must never be put in the dishwasher as it will damage both the blade and the handle. You must also refrain from cutting very hard objects - especially bones, cartilage, and frozen items.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
