Description & specifications

The Munetoshi Black Nashiji 135 mm Ko-Bunka - Shirogami #2 is a compact, professional kitchen knife made by the experienced 3rd-generation blacksmith Kouichi Tsurumaki. The knife combines a hard, sharp Shirogami #2 core steel with a rustic Black Nashiji finish, giving high cutting efficiency and a robust tool for everyday use. With water-hardened steel (61/62 HRC) you get long-lasting sharpness, while the 50/50 grind ensures precise control when cutting. The octagonal handle in bocote and black buffalo horn sits comfortably in the hand and provides a stable grip. Ideal for detailed work and versatile tasks in the kitchen where durability and finish are a priority.

Maintenance and use

Avoid cutting bones and frozen foods to extend the life of the edge. The knife must not be washed in a dishwasher, as this wears down the sharpness and can cause rust, even though some alloys are stainless. Wipe the knife dry after washing, oil the steel occasionally, and use a suitable hone or whetstone to maintain the edge.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
