Among the most exclusive knife manufacturers in the world we find Nenox from Tokyo. The knife here is a 285mm Sujihiki in western style with a fabulous edge and a beautiful black micarta handle.
The slicer is used to cut items with proteins, such as meat, chicken and fish. The long blade means that you do not need to saw through the item you are cutting, but can do it in one long stroke, and because the blade is narrow, it creates less friction, so that you protect the proteins in the raw material as much as possible.
The steel the knife is made of is stainless, and Nenox does not disclose anything about its composition. Certain manufacturers understandably do not want to reveal all secrets, but we can reveal that this is steel in an absolutely special class.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
