Known for their hand-forged tailor's shears and other tools such as this small kiridashi.
A kiridashi is a traditional Japanese "craft knife" used for precision work in materials such as leather or wood, but nowadays, knife enthusiasts like us use them, among other things, to test new natural stones to see what kind of polish the stone provides, for example, if one wants to create a kasumi finish.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
