A very pointed boning knife made after the Japanese gokujo shape. It is especially good for chicken and other poultry, as you can get into all the nooks and crannies with the tip. Just remember that this is a knife and not an axe, so the knife cannot withstand you trying to cut legs or similar. However, separating the meat from the bones is no problem.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
