The KAI Shun Pro Sho 240 mm Yanagiba is a traditional Japanese carving knife designed for the precise preparation of sushi and sashimi. With a long, slender 240 mm VG10 steel blade, it cuts thin, uniform slices with minimal friction, while the decorative etching on the blade provides an elegant appearance. Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
