Description & specifications

The KAI Shun Pro Sho 240 mm Yanagiba is a traditional Japanese carving knife designed for the precise preparation of sushi and sashimi. With a long, slender 240 mm VG10 steel blade, it cuts thin, uniform slices with minimal friction, while the decorative etching on the blade provides an elegant appearance. The knife's single-bevel grind and hollows (ur-formations) on the back reduce adhesion, allowing fish and meat to release easily. The black pakkawood handle in a traditional D-shape offers a comfortable and secure grip during long working sessions, making the knife suitable for professional chefs, sushi chefs, and food enthusiasts who demand precision and durability.
