Yoshimi Kato is a highly acclaimed blacksmith from Echizen, Japan. After apprenticing with his father-in-law, Hiroshi Kato, who also trained smiths like Yu Kurosaki, he now leads the forge located in the iconic Takefu Knife Village.
Yoshimi-san is known for his exceptionally good steel hardening and for his unusually beautiful knives, especially his Damascus cladding, which we consider some of the absolute finest available.
This santoku measures 170mm and features stainless powder steel, SG2, as its core steel. The core is then clad with Kato-san's truly stunning and complex Damascus cladding. Truly a beautiful piece of craftsmanship.

Foodgear always advises against cutting all forms of bones and frozen goods. Knives should not be washed in a dishwasher, as this removes sharpness and promotes rust attacks - even in stainless alloys!
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
