Description & specifications

Yu Kurosaki is a relatively young forge from Takefu Knife Village in Echizen, Japan. Over the past few years he has taken the knife world by storm with his creative designs and exceptional hardening skills.

The incredibly skilled forge is known for its extremely beautiful and functional knives. He is particularly known for his Tsuchime finish, which can be found on, among other things, his Senko series

The knife here is a sujihiki of 240mm made in 3 layers, with respectively SG2 in the core and 2 stainless outer layers. The sujihiki is used for carving meat and fish, but since the blade is sharpened on both sides, you can easily use it for vegetables and fruit.

SG2 is a very hard, stainless powder steel type which has the characteristics of being very sharp and holding the egg for a long time.

The knife, like all other good Japanese knives, cannot be machine washed , always wash your knives by hand. The knife cannot cut harder objects such as; frozen food, bones, hard cheeses, nuts, chocolate, etc.

Maintenance & use

Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.

Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
