Description & specifications
Yoshikane Hamono is a relatively small workshop based in Sanjo, Niigata. With over 100 years of experience, this small company has really made a name for itself and makes some exceptionally good knives. With Kazuomi Yamamoto at the helm of the workshop, they make some of the absolute best-cutting knives in the game
This knife is made of three layers of steel with an SKD11 core. It is therefore a fairly hard blade with high potential for sharpness, and it is a semi-stainless alloy. This means that the edge can develop a little patina but does not rust easily. The 2 outer layers are stainless.
The handle is octagonal and made of walnut and buffalo horn and buffalo horn ferrule

Like all other good Japanese knives, this knife is not dishwasher safe, and as the blade is not completely stainless, we recommend that you take great care to rinse and dry the blade very soon after cutting with it, as it will otherwise start to oxidize.
Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
