Masamoto Sohonten is an incredibly highly respected brand, with over 150 years of experience. Minosuke Matsuzawa - the 1st generation blacksmith under Masamoto, went to Osaka at the age of 17 to serve as an apprentice. 5 generations later, it is clear that Matsuzawa-san's vision has been carried on, and it can be safely said that Masamoto Sohonten has achieved legendary status within Japanese knives.
The KS Series is the one they are probably most known for. Fantastic grind that makes the knives extremely thin behind the edge, which gives them exceptional cutting ability, and the Fit & Finish is excellent.
The knives are made from a single layer of Shirogami (White Steel) 2, so they take a really sharp edge that can become very biting.
This knife is a 210 mm K-Tip Gyuto, suitable for all-around use for meat, fish, vegetables & fruit.
The knife comes with a saya.

Maintenance & use
Never cut into bones or frozen items as this may damage the egg. Always wash the knife by hand and dry it thoroughly immediately.
Please note that both the blade and handle can be seriously damaged and broken if the knife is washed in a dishwasher – this also applies to stainless steel and wooden handles.
