Description & specifications

Masamoto Sohonten is an incredibly highly respected brand, with over 150 years of experience. Minosuke Matsuzawa - the 1st generation blacksmith under Masamoto, went to Osaka at 17 years old to apprentice. 5 generations later, it's clear that Matsuzawa-san's vision has been carried on, and it's safe to say that Masamoto Sohonten has achieved legendary status in Japanese knives.

The KS-Series is what they are probably best known for. Excellent grind that makes the knives extremely thin behind the edge, giving them exceptional cutting ability, and the Fit & Finish is superb.

The knives are made from a single layer of Shirogami (White Steel) 2, so they take an edge very quickly, which can become very sharp.

This knife is a 240mm Sujihiki and is used for carving meat and fish.

The knife comes with a saya.
