They collaborate with various smiths and grinders throughout Japan, developing new series in the pursuit of making some of the finest knives in the world — as well as excellent knives at a lower price point to serve all needs.The Aokitae series is hand-forged in Kyuso, Japan, with a core of Aogami #2 surrounded by soft iron, meaning the knives will develop a patina over time and may rust if not properly cared for.They are finished with a classic kurouchi finish on the upper portion of the blade and a kasumi finish closer to the edge. The grind is excellent — thin behind the edge and with a beautiful distal taper. A great knife.
