He was also the first to introduce a "finger notch" in his knives, so that when you pinch the blade, your middle finger rests comfortably inside the notch.The Denka series is built in a 3-layer construction with Aogami Super as the core steel, surrounded by stainless cladding. They are finished with a beautiful tsuchime/kurouchi finish on the upper portion of the blade. The handle is western-style, made from black pakka wood.

Das Messer darf niemals in der Spülmaschine gewaschen werden und darf nicht zum Schneiden harter Materialien wie Knochen, Knorpel, Gelenke, gefrorenes Schnittgut oder harte Käsesorten verwendet werden. Dünnschliffige, harte Messer können splittern.
Wartung und Nutzung
Schneiden Sie niemals in Knochen oder gefrorene Lebensmittel, da dies das Ei beschädigen kann. Waschen Sie das Messer immer von Hand und trocknen Sie es sofort gründlich ab.
Bitte beachten Sie, dass sowohl die Klinge als auch der Griff ernsthaft beschädigt werden und brechen können, wenn das Messer in der Spülmaschine gewaschen wird – dies gilt auch für Griffe aus Edelstahl und Holz.
